Regional California cuisine is always in season at John Ash & Co. Executive Chef Thomas Schmidt nourishes the restaurant with an ever-changing bounty of local ingredients. Just a few steps from the kitchen door he’s able to source herbs and produce that have been planted and cared for by Culinary Gardener Chris Connell and a dedicated grounds team. In addition, Chef Tom combs the region’s farmers’ markets for the freshest organic produce and buys from neighboring artisanal food purveyors. The result is a fresh and diverse menu of indigenous Sonoma County foods artfully prepared and expertly paired with local, national, and international wines. The restaurant’s award-winning wine list features some 300 wines with an emphasis on exceptional and boutique wines from local vintners.
